Just a quick and simple muffin recipe for your Thanksgiving weekend!

For the muffins…
2-3 (depending on size) apples, peeled, cored, and diced
2 cups flour
2/3 cup white sugar
2 tsp baking powder
1 tsp salt
2 large eggs
3/4 cup milk
1/4 cup butter, melted
2 tsp cinnamon

For the streusel…
1/2-1 cup flour (this depends on how wet or crumbly you want your topping)
1/4 cup butter, melted
1/3 cup brown sugar
1 tsp cinnamon

Preheat oven to 400 degrees. Line a muffin tin with cupcake wrappers. In a large bowl, mix together the dry ingredients (for the muffins only) and then incorporate the wet ingredients until well combined. Now, gently stir in chopped apple pieces. Scoop about 1/4 cup batter into each cupcake liner (cookie scoops work great for this!) — the cups should be 2/3 full. Set aside. In a medium bowl, mix together all the ingredients for the streusel topping. Spoon or sprinkle the streusel on top of the batter in each muffin cup. Use as much as you want — I sprinkled enough to cover the entire top. Bake for 20-25 minutes or until lightly golden on top and a toothpick comes out clean. I drizzled a little bit of glaze on top to finish them off. This is super simple to make, too – just about a cup of confectioners sugar, a tablespoon of milk, and a dash of vanilla extract. You can add a little more sugar or milk to the mixture to make it a nice drizzling consistency. Let the muffins cool, then enjoy!
